There was an article in National Geographic this month about how having a clean and organised home significantly reduces anxiety and stress and increases quality of sleep, and has a measurable decrease on cortisol levels. Also, if you make organizing a regular habit, the routine nature of the act of organizing can calm you and a give you a feeling of well-being.
