Interesting. I’ve read that muscle mass and energy expenditure in general plays a huge role. If I’m not mistaken some can even remain in ketosis while using carbs sparingly.. is that true?
Yes, I meant that after falling off the wagon and REALLY eating carbs it takes me about five days to get back there.

I can keep in light ketosis when eating quite sparingly, about 25 grams or less in a day. (basically condiments only, I like HP sauce with my steak)

Do different glycemic indexes play any sort of role in this?

I haven't noticed any difference.

I mean, the fastest carbs absorb in twenty minutes, and the slowest take like, 100 minutes or so, but your body won't deplete the glycogen stores in your skeletal muscle and liver for a helluva lot longer, AFAIK.
